Preheat oven to 350 degrees. Line a muffin tin with muffin liners. This recipe makes approximately 18 muffins, so you will need 2 muffin tins or to make two batches.
First, make the crumb topping. Mix candied ginger, cinnamon sugar, flour and melted butter together in a small bowl until combined and set aside.
Next, make the batter. In a medium bowl, whisk the eggs, pumpkin, oil, milk, and vanilla extract together. Once combine, add the remaining ingredients and mix well, though be careful not to overmix.
Lastly, whip softened cream cheese and maple syrup well to combine.
Spoon a heaping tablespoon of pumpkin muffin batter into the muffin cups to cover the bottom. Layer with a slightly under filled tablespoon of cream cheese filling, then fill the remainder of the cup with muffin batter. Sprinkle a generous amount of crumb topping onto each, then press it down into the tops of the muffins to help prevent it from falling off as the muffins bake.
Bake for 22-24 minutes and enjoy!
Yields: Approximately 18 muffins
