Carrot Cake Muffins
Happy Easter from the Ruvi team! These carrot cake muffins are the perfect fluffy, cinnamon filled snack for breakfast or for a grab & go on Easter weekend! Try them out and let us know what you think!
INGREDIENTS:

1 ½ cups flour

1 cup sugar

1 packet Ruvi Clean

1 tsp. cinnamon
-
1/4 tsp. nutmeg

½ tsp. baking soda
-
½ tsp. baking powder
-
½ tsp. salt
-
½ cup vegetable oil
-
⅓ cup brown sugar
-
2 large eggs (room temp. preferred)

1/4 cup milk
-
1 tbsp. vanilla extract
-
2 cups finely grated carrots, freshly grated

Optional: 1 cup walnut pieces
INSTRUCTIONS:

Preheat oven to 350 degrees. Grease or line muffin tin.

In a large bowl, combine all dry ingredients. Then add all wet ingredients and mix well. Add grated carrots & walnuts if desired.

Fill muffin cups about 2/3 full.

Bake 20-22 minutes. Insert a clean toothpick into muffin and if it comes out clean, they are done.
