RUVI RECIPE: Egg Bites

Mornings can be busy and overwhelming trying to get everyone ready, fed, and out the door. That's where Ruvi's egg bites come into play! High in protein, added fruits and vegetables with Ruvi freeze dried powders and any toppings you'd like...yes please! And, kids love them!

Plus, they keep well in the freezer. Just microwave for 30 seconds and you've got a perfect protein-packed, nutrient-dense breakfast on the go!

INGREDIENTS

  • 6 eggs
  • 1/2 cup cottage cheese
  • 1/2 tsp. salt
  • Pinch of pepper
  • 1 Ruvi Clean
  • 1 1/4 cup shredded cheddar
  • 1/2 cup chopped sausage or crumbled bacon

INSTRUCTIONS

  1. Preheat oven at 350.
  2. Add eggs, cottage cheese, Ruvi Clean and salt + pepper to a blender. Blend well for 20-30 seconds.
  3. Add about 2 tablespoons of cheese to each baking cup (makes appx. 10). Cover with eggs filling about 2/3 cup full.
  4. Sprinkle sausage or bacon over the top of each bite.
  5. Bake for approximately 20 minutes or until center of bite is firm.
  6. Enjoy immediately or freeze and save for breakfast later! If you choose to freeze, microwave for 30 seconds and they'll be ready to go!
