RUVI RECIPE: CARROT CAKE MUFFINS

 

Happy Easter from the Ruvi team! These carrot cake muffins are the perfect fluffy, cinnamon filled snack for breakfast or for a grab & go on Easter weekend! Try them out and let us know what you think!

 

INGREDIENTS:

  • 1 ½ cups flour

  •  1 cup sugar

  • 1 packet Ruvi Clean

  • 1 tsp. cinnamon

  • 1/4 tsp. nutmeg

  •  ½ tsp. baking soda

  •  ½ tsp. baking powder

  •  ½ tsp. salt

  •  ½ cup vegetable oil

  •  ⅓ cup brown sugar

  •  2 large eggs (room temp. preferred)

  • 1/4 cup milk

  •  1 tbsp. vanilla extract

  •  2 cups finely grated carrots, freshly grated

  • Optional: 1 cup walnut pieces

 

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Grease or line muffin tin.

  2. In a large bowl, combine all dry ingredients. Then add all wet ingredients and mix well. Add grated carrots & walnuts if desired.

  3. Fill muffin cups about 2/3 full.

  4. Bake 20-22 minutes. Insert a clean toothpick into muffin and if it comes out clean, they are done.

  5. Enjoy!
