RUVI RECIPE: FROZEN YOGURT BITES

 

AN AFTER SCHOOL SNACK SURE TO PLEASE YOUR KIDS

(Plus it's healthy, so it's a parent pleaser too!)

  

It's that time of year again... back to school is just around the corner! Not only do you need to get school supplies in order, but schedules, first day outfits and all the other little details! It can be chaos to say the least. Then, those first days of school roll around and flying in come your children from the bus and straight to the pantry they head for an after school snack. Truthfully, we get that this may not be top of mind for you, so we are here to help!

We've got an easy snack, that's perfect to prep ahead of time and is totally wholesome and healthy!

What more can you ask for?!

 

INGREDIENTS

  • 1 1/2 cups fruit of choice

  • 1 1/2 cups full fat plain greek yogurt

  • 2 tablespoons honey

  • Sprinkle of salt

  • About 1 cup of granola - use your favorite!

  • 1 Ruvi packet of your choice - optional

  • 3-4 ounces of milk - optional

 

A few tips before you start!

  1. Make sure you use full fat yogurt - that way you will get a beautiful creamy texture due to the lower water content.

  2. You can make these bites in either a full size 12 count muffin pan, or a mini 24 count muffin pan - whichever you prefer!

 

INSTRUCTIONS

  1. Place liners in your muffin tin - 12 count or 24 count, whichever you prefer!

  2. In a bowl combine honey, salt and fruit of choice (if the fruit is larger, like strawberries, we recommend dicing up first). Mash together well.

  3. We love adding Ruvi to add in extra fruits & veggies but it is optional. If you want to add it in you will want to choose the complementary Ruvi blend to your fruit choice, and mix it in a blender bottle with 3-4 ounces of milk.

  4. Add yogurt, and Ruvi if using, to your fruit mixture. Mix well.

  5. Scoop your favorite granola into the bottom of each liner (1 tablespoon for 12 count or a heaping teaspoon for 24 count).

  6. Scoop yogurt mixture on top granola in each cup.

  7. Place bites in the freezer for 3 hours and enjoy! Bites will stay fresh in the freezer for 3 weeks.
